» THE MOUNTAIN GOAT
For this fun food adventure, we were invited to enjoy a home cooked meal by a local Ninh Binh family. Ninh Binh mountain goat is a local specialty that you can find offered in many different restaurants. Each restaurant offer their own secret recipe, so no dish is quite the same. The goat meat in Ninh Binh is known for being firm and aromatic, without much fat. It is said that due to Ninh Binh’s rocky mountains, the goats are more active and eat more herbs than in many other areas, which is why the meat is less fatty.
?The goat is stuffed with spices including Vietnamese curry leaves, ginger, galangal and lemongrass. Goat intestine, blood and throat are added over grilled shallots. Fig fruit, star fruit, young banana and carrot are an optional part of this dish.
