1. RALF’S ICE-CREAM LAB

?FISH SAUCE ICE-CREAM: Pour cane sugar, dextrose sugar, skim milk powder, inulin and gelatine powder in a container, mix and put aside. Mix together fish sauce, heavy whipping cream and UHT milk. Slowly add both mixtures in the Micronizer Blender. Place the mixture in the fridge for at least 12 hours. Later, take it out and pour it into the Petch Freezer for 5 minutes to pasteurize the liquid. Turn the machine to freezing mode (-8ºC). Last, put the ice-cream in a container and place in the fridge (-36ºC) for at least 30 minutes.

?PHO ICE-CREAM: Pour sugar, dry glucose, inulin and soberto in a container and put aside. Pho liquid: Add pho, broth, herbs, chilli sauce and hoisin sauce in a bowl. Filter the pho broth into a separated container and add mineral water. After that, mix in the pho noodles. Slowly add both mixtures in the Micronizer Blender.Place the mixture in the fridge for 12 hours. Later, take it out and pour it into the Petch Freezer. Turn the machine to freezing mode.

They will be dipped in brown sugar sauce and then auto-packed.

?KEM MERINO X ĐẬU XANH YẾN MẠCH (MUNG BEAN AND OATMEAL ICE-CREAM): The ice-cream will be automatically pumped into the Freezer after being mixed for 1-2 hours. Coconut Milk and mung bean will be added using different machines. The ice-cream molds will be filled automatically. The ice-cream sticks will be auto-added at this step. They will be dipped in oatmeal white chocolate and then auto-packed.

?GIANT FRESH MILK BOBA ICE-CREAM CUP: Add brown sugar sauce in the giant cup. Add the boba and ice-cream and create multiple layers with the sauce until it is filled up.
