🇲🇽 WHOLE WILD BOAR: Slaughter and de-skin the meat. Hang to drain the blood. Trim the fat. Cut the boar open. Season the pig with salt and a special sauce (oregano, salt and herbs). Puncture boar with wires and attach it to clamps. The way he roasts it is to ensure the meat cooks evenly. Add clamp over fire with pig. Rotate every 3-5 minutes. When close to ready, add Adobe (made from chile guajillo blended with garlic, cumin, salt and onions sauce and cut meat. Serve with salsa, guacamole & tortillas.

🇲🇽 GRASSHOPPER SOUP: Pour grasshoppers into a pot with water. Place on fire and allow it to boil. When it’s cool, blend the grasshoppers then strain the liquid into a separate pot. Only the concentrated liquid Is used because the other part is too crunchy and has grasshopper legs. Add homemade salsa made from a blend of four different chile peppers to the broth and stir. Pour into boil and sprinkle more grasshoppers on top . Serve with cilantro and cut onions similar to consomé de barbacoa.

🇲🇽 LION MEAT: Place the Lion meat on grill and add salt. Continue flipping until completely cooked.

  1. On the wild boar, they're domesticated pigs that went back to fending for themselves. In my experience when trappers catch wild hogs they can sell them to processors. From my understanding is they feed the wild pigs feed for a acouple weeks which is to get rid the wild flavor and worm them. They then process with farm raised pig and you cant tell the difference.
    So if the pigs are eating feed, not really wild boar flavor.
    But i have heard if the boars still have there testicles and you kill them when there upset that the testosterone will make it taste like rotten trash.
    So the boars with balls have to happy and die instantly.
    Other thing is generally wild hogs dont have fat, if the do its very little. So really no bacon on wild hogs.

    중국에 특이한 식재료가 많다고 생각했는데 멕시코도 만만치 않네요

  3. Those are not grasshoppers, come to Uganda between November and early December, you will see what grasshoppers are. In fact, this is their season right now.
