🇮🇩DANGE CAKE (BLACK STICKY RICE CAKE): Mix flour, coconut flakes, and brown sugar. Pour mixture into mold. Cook on firewood for 15 minutes.

🇮🇩BARONGKO (BANANA CAKE): Mix bananas with eggs, baking soda, coconut milk, and food coloring. Grind, shake or blend mixture. Pour mixture into banana leaves, then wrap and steam for about 15 minutes.

🇮🇩NASU BEMBEK (GOAT HEAD CURRY/SOUP): Cut goat head in half. Add spicy paste between the skulls (made from blending turmeric, lemongrass, red chillies, garlic, red shallots, pepper, cilantro, kaffir lime leaves, galangal, cinnamons & coriander). Join skull halves and tie intestines around the goat head. Place the goat head into the pot. Add more spices and water with tamarind. Let it boil, then wait for another five minutes. Turn off the heat, then wait for another 30 minutes without uncovering the lid. Turn on the heat for seven minutes without uncovering. Add coconut milk, then mix well. Cook until the meat is cooked through & tender.

🇮🇩Sop Konro (Goat Bone Soup): Make spice paste using sauteed red shallots, red chilis, lemongrass, garlic, galangal, star anise, kluwak (black nut), pepper, kaffir lime leaves, toasted candlenut, coriander, nutmeg and cloves. Place goat ribs into a pot and add spice paste. Add tamarind mixed with water. Cook for 1 hour. Serve with fried onions and lime juice.

🇮🇩Konro Bakar (Grilled Goat Meat): Chop goat meat into bite-sized pieces, then skewer it. Coat the meat with a mixture of soy sauce and pepper. Glaze with special peanut sauce. Grill on coal until well done.

🇮🇩Kudu-Kudu (Boxfish): Clean boxfish thoroughly. Remove meat and internal organs. Wash fish thoroughly again. Grind fish meat with peppers, shallots, garlic, onion leaves, flour, and eggs. Add cooking oil to the pan (wok) and fry fish meat. Stuff fried fish meat into the shell. Grill fish on coal.

🇮🇩Bale Masapi (Milkfish): Roll up milkfish, then hold the roll with a skewer. Grill rolled fish on coal. Transfer fish to wok. Add coconut milk, MSG, salt and instant turmeric and allow it to boil. Add more coconut milk and lemongrass leaves. Simmer until fully cooked.

  4. This is Bugis tribe's homeland in South Sulawesi. Their most famous members are probably the former president and aerospace engineer B.J. Habibie and the former vice president and businessman M. Jusuf Kalla. A few hundred km hop north, you will encounter Toraja people, including the biggest Jesus Christ statue in the world (Patung Jesus Buntu Burake). Where you will meet people who summon the dead to walk themselves to their final resting place.
    Also, home of one of our best coffee (Kalosi). One of the earthiest and chocolatiest-coffee in our country, despite being Arabica with all of its fruitiness, perfect for your milk-infused brew like latte or cappuccino.
