Actually the sheep were doing it because there was a dangerous threat near. They circle and it creates confusion as well as protects the ones in the middle. If you took a time laps of them doing it the ones in the will switch out. The consistent movement leaves the predictor unable to zero in on one of the flock. Rather than if they were in there natural state grassing and stand still the predator would be able to stalk and zero in on one or a few and get its kill.
